ProfileThe wine has a high aromatic intensity, mixture of quince, honey and thyme. More subtle aromas include vanilla, toasted almonds and molasses. Good mouthfeel, round and rich, with a pleasant acidity.
Grape GrowingSoil composition is clay-loam soil with shallow depth of 30 cm. Manual harvest in the morning brought in a great harvest thanks to a good ripeness of the grapes. The harvest was early, leading. to good acidity. Yields were 2.5 kg per plant.
WinemakingSoft pressed 50% of the yield, followed by 24 hours of maceration. Fermentation with native yeasts in steel tank lasted for 4 weeks, and ended in barrel, amphora and demijohn.
More About the WineThis wine is made from the very first grapes they planted. They use three materials such as wood, soil, and glass (barrels, amphora, and demijohn) as the winemaker's grandfather explained to him was done in the past.
